Zucchini-Sausage Casserole

Since i didn't post a five ingredient friday recipe, I'll add a new favorite of mine. I just tried it out a couple of weeks ago. It's a great way to use Zucchini. It was Shaylee approved, which is always a plus.

Zucchini-Sausage Casserole

1 Lb. pork sausage
4 medium Zucchini diced into bitesized pieces
1 can cream of chicken soup
1 8oz. carton of sour cream
4 cups stuffing mix
1/3 cup butter melted


Brown sausage in a skillet, drain and return to pan. Add diced Zucchini to skillet and cook until soft.


In a small bowl combine soup and sour cream; add to zucchini mixture. Set aside.


In a medium bowl combine stuffing mix and melted butter.


In a 3 qt. baking dish; spoon half of the stuffing mixture. Spread sausage zucchini mixture over the stuffing, Spoon remaining stuffing evenly over the top. Bake covered, in a 350 oven for 30 mins.
